We purchase our rail spikes from Birmingham Rail right here in the US. Walter then forges each one in a process that first requires him to de-temper the steel. Then the 6 inch spike is then hammered to a long taper that is turned on the end for both right and left handed chefs. He heats and turns a traditional twist in the handle that gives a good grip and look to the piece. The rail head is then polished to a mirror like shine. 

Carefully Seasoned for Culinary Use

When the piece is complete they are seasoned in an oven in the same manner you would season a cast iron skillet. This produces a natural patina on the fork that will darken with time. We use a light coat of vegetable shortening (Crisco, in my case) that ensures a food safe season. 

Care and Storage of Your Hand Forged Iron Grilling Tool

Its really easy and simple. Scrub your fork after use using hot water only. Wipe your tip with a light coat of shortening, olive oil or non stick cooking spray and wipe away any excess. We always recommend dry storage when not in use. Your fork can be re-seasoned as needed by coating with a light coat of shortening or olive oil and heat in a 350 degree oven for 45 minutes. Turn the oven off and allow the piece to cool completely in the oven. If your fork is "sticky", reheat for another 30 minutes or so. The stickiness is caused by too much oil or shortening. A little goes a long way.

Should accidental rusting due to moisture exposure occur, scrub good with a steel wool pad and re-season your forged cooking tool.

Hand Made tools will vary slightly 

As with all hand made things there are slight variations caused by nature of process. These forks average from 19 to 21 inches in length. The longer the fork the slimmer the stock. The fire and hammer will leave its fingerprint on each fork. If you need a left handed fork please be sure and choose this option. We send right handed forks unless otherwise requested. It does make a difference. The pigtail on a right handed fork will be upside down to a left handed user.
